Instructions:In a medium saucepan, combine quinoa and water Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes, or until quinoa is tender and water is absorbed Remove from heat and let cool In a small bowl, mix rice vinegar, sugar, and salt until sugar and salt are dissolved Stir into cooled quinoa To assemble, place a small round mold such as a clean tuna can with both ends removed on a plate Layer quinoa, avocado, cucumber, carrot, and red bell pepper inside the mold, pressing down gently after each layer Carefully remove the mold to reveal the sushi stack Top with a square of nori and serve Repeat with remaining ingredients to make more stacks
