Instructions:In a skillet, melt 50g of butter over medium heat Add chopped onion and garlic, saut until translucent Add chicken livers to the skillet, cook until browned but still pink inside Pour in brandy, let it simmer for a minute Remove skillet from heat and let it cool slightly Transfer the mixture to a food processor Add remaining butter and heavy cream to the food processor Blend until smooth and creamy Season with salt and pepper to taste Transfer mousse into serving dishes, cover, and refrigerate for at least 2 hours Before serving, garnish with fresh thyme leaves
