Bacon Caramel Kettle Corn

Savor the delicious combination of sweet and savory Bacon Caramel Kettle Corn. The rich flavors of caramel and crispy bacon are combined with the crunch of kettle corn in this irresistible treat. Ideal as a novel snack for any occasion or for movie nights!

Ingredients:

  • 1/2 cup popcorn kernels

  • 6 slices of bacon, cooked and crumbled

  • 1/2 cup granulated sugar

  • 1/4 cup unsalted butter

  • 1/4 cup light corn syrup

  • 1/4 teaspoon salt

  • 1/4 teaspoon baking soda

  • 1/2 teaspoon vanilla extract

Instructions:

Pop the popcorn kernels using your preferred method and place them in a large mixing bowl


Remove any unpopped kernels


In a saucepan over medium heat, melt the butter, then stir in the granulated sugar, corn syrup, and salt


Cook, stirring constantly, until the mixture reaches 300F 150C on a candy thermometer, or until it turns a deep amber color usually around 5-7 minutes


Remove the caramel mixture from the heat and quickly stir in the baking soda and vanilla extract


Be careful as the mixture will bubble up


Immediately pour the caramel over the popped popcorn and add the crumbled bacon


Gently toss the popcorn to coat it evenly with the caramel and bacon pieces


Spread the caramel-coated popcorn and bacon mixture onto a parchment-lined baking sheet, separating any clumps


Allow the Bacon Caramel Kettle Corn to cool and harden for about 20-30 minutes


Break the kettle corn into bite-sized clusters and enjoy!

Brown Rice Sushi Rolls

This sushi roll is full of healthy things like crab meat, avocado, and cucumber. It's made with brown rice. Now you can eat sushi in a healthier way!

Ingredients:

  • 2 cups cooked brown rice

  • 4 nori seaweed sheets

  • 200g cooked crab meat or imitation crab sticks

  • 1 avocado, thinly sliced

  • 1 cucumber, julienned

  • 2 tablespoons rice vinegar

  • 1 tablespoon sugar

  • 1/2 teaspoon salt

  • Soy sauce, for serving

  • Pickled ginger, for serving

  • Wasabi, for serving

Instructions:

Mix rice vinegar, sugar, and salt in a small bowl until the sugar and salt are gone


Each nori seaweed sheet should have an even layer of cooked brown rice, leaving about an inch of space at the top


Along the bottom edge of the nori sheets, line them with crab meat, avocado slices, and cucumber strips


From the bottom to the top, roll the nori sheet tightly


Seal the edge with a little water


Cut the rolls into small pieces with a sharp knife


Soy sauce, pickled ginger, and wasabi should be served with it

Balsamic Spring Vegetable Salad

A refreshing and healthy vegan, gluten-free salad that celebrates the flavors of spring. This salad is packed with fresh vegetables and drizzled with a tangy balsamic dressing.

Ingredients:

  • 2 cups mixed spring greens

  • 1 cup cherry tomatoes, halved

  • 1 cup cucumber, diced

  • 1 cup asparagus, trimmed and blanched

  • 1/2 cup red bell pepper, diced

  • 1/4 cup red onion, thinly sliced

  • 1/4 cup fresh basil leaves, torn

  • 1/4 cup roasted sunflower seeds

  • 1/4 cup balsamic vinegar

  • 2 tablespoons olive oil

  • 1 tablespoon maple syrup

  • 1 clove garlic, minced

  • Salt and pepper to taste

Instructions:

In a large salad bowl, combine the spring greens, cherry tomatoes, cucumber, asparagus, red bell pepper, red onion, basil leaves, and sunflower seeds


In a small bowl, whisk together the balsamic vinegar, olive oil, maple syrup, minced garlic, salt, and pepper to make the dressing


Drizzle the dressing over the salad and toss gently to coat all the ingredients evenly


Let the salad sit for a few minutes to allow the flavors to meld

Flourless Chocolate Cake

Enjoy the rich, moist, and rich flavor of a flourless chocolate cake without the use of nuts. Ideal for those who enjoy chocolate!

Ingredients:

  • 1 cup 2 sticks unsalted butter

  • 1 1/4 cups semisweet chocolate chips

  • 1 cup granulated sugar

  • 1/4 cup unsweetened cocoa powder

  • 1 teaspoon pure vanilla extract

  • 1/4 teaspoon salt

  • 6 large eggs

Instructions:

Before beginning, preheat the oven to 325F 160C and grease a 9-inch round cake pan


Melt the butter and semisweet chocolate chips in a bowl that is safe to use in the microwave, stirring to ensure smoothness


In the microwave, this should take about 2 minutes; stir every 30 seconds to prevent burning


Mix the granulated sugar, cocoa powder, vanilla extract, and salt in a different bowl


Mix thoroughly after adding the melted chocolate mixture to the sugar mixture


Once the batter is smooth and thoroughly mixed, beat in each egg one at a time


Transfer the mixture into the ready-made cake pan


Bake for approximately 35 to 40 minutes in a preheated oven, or until a toothpick inserted into the center emerges with a few moist crumbs attached


After letting the cake cool in the pan for ten to fifteen minutes, loosen the edges with a knife and take it out of the pan


Place it on a wire rack and let cool fully


If desired, dust the cooled cake with powdered sugar before serving

Sweet Tea Peach Moonshine Cocktail

  • 4 oz sweet tea
