Protein Fudgesicles w/Dark Chocolate Coconut Granola

For a tasty and healthy treat, try these fudgesicles that are creamy and full of protein. They are topped with dark chocolate coconut granola.

Ingredients:

  • 2 cups Greek yogurt

  • 1/4 cup cocoa powder

  • 1/4 cup honey or maple syrup

  • 1 teaspoon vanilla extract

  • 1/2 cup dark chocolate chips

  • 1/2 cup granola

  • 1/4 cup shredded coconut

Instructions:

Greek yogurt, cocoa powder, honey or maple syrup, and vanilla extract should all be mixed together in a bowl


Mix it well until it's smooth


Add the dark chocolate chips and mix well


When you pour the mixture into the popsicle molds, make sure there is some room at the top for the granola


Mix granola and coconut shreds in a different bowl


Add some of the granola mix to the top of each popsicle


Put in the popsicle sticks and freeze until solid, which should take at least 4 hours


Take the popsicles out of the molds and enjoy once they are frozen

Slow Cooker Cranberry Pineapple Ham

This Slow Cooker Cranberry Pineapple Ham is a delightful dish perfect for holiday gatherings. The combination of cranberry sauce, pineapple juice, and brown sugar creates a sweet and tangy glaze that perfectly complements the savory ham. The slow cooker does all the work, leaving you free to enjoy time with family and friends.

Ingredients:

  • 1 5-7 lb fully cooked ham

  • 1 cup cranberry sauce

  • 1 cup pineapple juice

  • 1/2 cup brown sugar

  • 1/4 cup Dijon mustard

  • 1 tablespoon apple cider vinegar

Instructions:

Put the ham in the crock pot


Gather pineapple juice, brown sugar, Dijon mustard, and apple cider vinegar in a bowl


Mix them together


Put the mix on top of the ham


Cover and cook on low for 6 to 8 hours or high for 3 to 4 hours, adding the juices every now and then to bast


After it's done, wait 10 minutes before cutting it


Use the rest of the sauce from the slow cooker to top

Crispy Belgian Waffles

Using your waffle iron, you can make tasty, crispy Belgian waffles at home. You can add your favorite toppings to these waffles to make them your own. They're great for breakfast or brunch.

Ingredients:

  • 2 cups all-purpose flour

  • 2 tablespoons sugar

  • 1 tablespoon baking powder

  • 1/2 teaspoon salt

  • 2 large eggs

  • 1 3/4 cups milk

  • 1/2 cup unsalted butter, melted

  • 1 teaspoon vanilla extract

Instructions:

Preheat your waffle iron according to the manufacturer's instructions


In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt


In another bowl, beat the eggs and then add the milk, melted butter, and vanilla extract


Mix well


Pour the wet ingredients into the dry ingredients and stir until just combined


Be careful not to overmix; a few lumps are okay


Lightly grease the waffle iron with non-stick cooking spray or a small amount of melted butter


Pour an appropriate amount of waffle batter onto the center of the preheated waffle iron, close the lid, and cook according to your waffle iron's instructions or until golden brown and crispy


Carefully remove the waffle and serve hot with your favorite toppings, such as syrup, fresh berries, or whipped cream

Eggplant Parmesan Panini

This Eggplant Parmesan Panini cooked in an air fryer is a tasty take on a traditional Italian dish. In a panini press or skillet, crispy breaded eggplant slices are stacked with marinara sauce and mozzarella cheese. They are then grilled until they are just right. The sandwich tastes great, is easy to make, and fills you up.

Ingredients:

  • 1 medium-sized eggplant, sliced into 1/2-inch rounds

  • 1 cup all-purpose flour

  • 2 eggs, beaten

  • 1 cup breadcrumbs

  • 1 cup marinara sauce

  • 4 slices mozzarella cheese

  • 4 slices Italian bread

  • 2 tablespoons olive oil

  • Salt and pepper to taste

  • Fresh basil leaves for garnish optional

Instructions:

For 5 minutes, heat your air fryer up to 375F 190C


On both sides, sprinkle salt and pepper on the eggplant slices


First, coat both sides of each eggplant slice with flour


Then, coat them with beaten eggs


Finally, cover them with breadcrumbs


Set them down on a plate


Use olive oil or a nonstick cooking spray to coat the air fryer basket


Spread the breaded eggplant slices out in a single layer in the air fryer basket


Make sure they don't touch each other


For 8 to 10 minutes, flip the eggplant slices over and air fry them until they are golden brown and crispy


Warm up a panini press or a skillet over medium-high heat while the eggplant cooks


Spread marinara sauce on one side of each slice of Italian bread before putting the panini together


On top of the marinara sauce on two pieces of bread, put a slice of mozzarella cheese


After the eggplant slices are done in the air fryer, put them on the bread slices that have cheese on them


Put another slice of mozzarella on top of the eggplant, and then spread marinara sauce on the rest of the bread slices


Set the panini in a panini press or skillet that has already been heated up


Put it on the grill for three to four minutes on each side, or until the cheese melts and the bread gets crispy


After taking the paninis out of the pan or press, let them cool for one minute before cutting them in half


If you want, you can add fresh basil leaves as a garnish


Warm up your Eggplant Parmesan Panini and dive right in!

Homemade Burger

Make delicious homemade burgers with a mix of ground beef, pork, and veal. These juicy burgers are packed with flavor and are perfect for a weekend barbecue.

Ingredients:

  • 1 lb ground beef

  • 1/2 lb ground pork

  • 1/2 lb ground veal

  • 1/2 onion, finely chopped

  • 2 cloves garlic, minced

  • 1/4 cup breadcrumbs

  • 1/4 cup milk

  • 1 egg

  • 1 tsp salt

  • 1/2 tsp black pepper

  • 4 hamburger buns

  • Lettuce leaves

  • Tomato slices

  • Onion rings

  • Cheese slices optional

  • Ketchup and mustard for condiments

Instructions:

Mix the ground beef, ground pork, and ground veal together in a bowl


Cut the onion into small pieces and mix them with the garlic


Add the breadcrumbs, milk, egg, salt, and black pepper


Add the breadcrumb mixture to the meat mixture and mix it in slowly until it's well blended


Make 4 burger patties of the same size out of the mixture


Set your grill or skillet on the stove to medium-high heat to get it ready


For medium-rare, cook the burger patties for about 4 to 5 minutes on each side


If you like your burgers more done, cook them longer


You can grill or toast the hamburger buns until they are just barely browned


Put lettuce leaves, a burger patty, tomato slices, and onion rings on the bottom bun to make your burgers


You can put a slice of cheese on top of the patty if you want to


Put ketchup and mustard on the top bun, and then put it on top of the burger


Warm up your homemade burgers and serve them with your favorite sides

Creamy White Bean Stew with Smokey Bacon

A thick and filling stew made with white beans that are really creamy and bacon that tastes savory and smokey. On cold days, this hearty dish is a great way to warm up.

Ingredients:

  • 2 cans white beans, drained and rinsed

  • 6 slices smokey bacon, diced

  • 1 onion, finely chopped

  • 3 cloves garlic, minced

  • 4 cups chicken broth

  • 1 cup heavy cream

  • 1 teaspoon thyme leaves

  • Salt and pepper to taste

  • 2 tablespoons olive oil

  • Chopped fresh parsley for garnish

Instructions:

Put olive oil in a big pot and heat it over medium-low heat


Put in the bacon pieces and cook until they are crispy


Take out the extra fat, leaving only a tablespoon in the pot


Put in the chopped garlic and onions, and cook until the onions are soft


Add the thyme leaves and chicken broth, and then bring the mixture to a simmer


Add the white beans and stir them in


Cook for 15 to 20 minutes, or until the beans are soft


Blend half of the soup until it is smooth with a blender


Put it back in the pot


Add the heavy cream, stir it in well, and add salt and pepper to taste


Let the flavors blend for another 10 minutes by simmering


Serve hot with fresh parsley chopped on top


Smoked bacon and creamy white beans are a great combination

MMM!!! Easy homemade carrot cake recipe - so moist and SOOO good!

This vegan carrot cake is very moist and tastes great. The spices and sweetness make it just right. It's easy to make and will look great!

Ingredients:

  • 2 cups all-purpose flour

  • 2 tsp baking powder

  • 1 tsp baking soda

  • 1 tsp ground cinnamon

  • 1/2 tsp ground nutmeg

  • 1/2 tsp salt

  • 1 cup unsweetened applesauce

  • 1/2 cup maple syrup

  • 1/2 cup almond milk

  • 1/3 cup coconut oil, melted

  • 2 tsp vanilla extract

  • 2 cups grated carrots

  • 1/2 cup chopped walnuts optional

Instructions:

Preheat oven to 350F 175C


Grease and flour a 9x13 inch baking pan


In a large bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt


In a separate bowl, mix together applesauce, maple syrup, almond milk, coconut oil, and vanilla extract


Stir wet ingredients into dry ingredients until just combined


Fold in grated carrots and chopped walnuts


Pour batter into prepared pan and smooth the top


Bake in preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean


Allow cake to cool completely before serving

Thai Chicken and Coconut Soup

A comforting and aromatic Thai soup with tender chicken, coconut milk, and a harmonious blend of Thai herbs and spices.

Ingredients:

  • 1 lb chicken breast, thinly sliced

  • 1 can 13

  • 5 oz coconut milk

  • 4 cups chicken broth

  • 1 stalk lemongrass, bruised and chopped

  • 3 kaffir lime leaves

  • 2 inches galangal, sliced

  • 3 tbsp fish sauce

  • 1 tbsp soy sauce

  • 1 tbsp brown sugar

  • 1 cup mushrooms, sliced

  • 1 medium-sized tomato, diced

  • 2 red chili peppers, thinly sliced

  • 1/2 cup cilantro, chopped

  • 2 tbsp lime juice

  • Salt and pepper to taste

Instructions:

In a pot, combine coconut milk, chicken broth, lemongrass, kaffir lime leaves, and galangal


Bring to a simmer over medium heat


Add sliced chicken to the pot and cook until the chicken is no longer pink


Stir in fish sauce, soy sauce, and brown sugar


Adjust seasoning with salt and pepper to taste


Add mushrooms, diced tomatoes, and sliced chili peppers to the soup


Simmer until vegetables are tender


Remove lemongrass, kaffir lime leaves, and galangal slices from the soup


Stir in lime juice and chopped cilantro just before serving


Serve hot and enjoy the flavorful Thai Chicken and Coconut Soup!

Chocolate Poke Cupcakes

A tasty change from the usual chocolate poke cake is these Chocolate Poke Cupcakes. They have chocolate, are moist, and are filled with a gooey chocolate sauce. Just what you need to satisfy your chocolate cravings!

Ingredients:

  • 1 box chocolate cake mix

  • 3 large eggs

  • 1/2 cup vegetable oil

  • 1 cup water

  • 1 cup chocolate chips

  • 1/2 cup sweetened condensed milk

  • 1/2 cup hot fudge sauce

  • 1/2 cup heavy cream

  • 1 teaspoon vanilla extract

  • 1/4 cup powdered sugar

  • Whipped cream for garnish

  • Chocolate shavings for garnish

Instructions:

Warm up the oven to 350F 175C and put cupcake liners in a muffin tin


Put the eggs, vegetable oil, water, and chocolate cake mix in a large bowl


Mix everything together well


The chocolate chips should be carefully mixed in


The cake batter should be about two thirds of the way up each cupcake liner


It's done when a toothpick stuck in the middle of a cupcake comes out clean after 18 to 20 minutes of baking


Make the chocolate poke sauce while the cupcakes are baking


Put the sweetened condensed milk and hot fudge sauce in a bowl that can go in the microwave


Put it in the microwave for 30 seconds and stir it until everything is well mixed


Put away


After the cupcakes are done, take them out of the oven and let them cool for a while


Make holes in the tops of the cupcakes with the back of a wooden spoon or something similar


Do not forget to fill the holes in the cupcakes with the chocolate poke sauce


Pour it over the warm cupcakes


Whip the heavy cream in a different bowl until stiff peaks form


Add the powdered sugar and vanilla extract and keep whipping until everything is well mixed


Frost the cupcakes with whipped cream that you pipe or spread on top


Add some chocolate shavings and whipped cream on top to make it look nice


Serve your tasty Chocolate Poke Cupcakes and enjoy them!
