Veggie Quinoa Sushi Stack

A delightful twist on traditional sushi, this vegan quinoa sushi stack is visually stunning and bursting with flavors and textures. Each layer offers a different taste experience, making it a delightful dish for any occasion.

Ingredients:

  • 1 cup quinoa, rinsed

  • 2 cups water

  • 3 tablespoons rice vinegar

  • 1 tablespoon sugar

  • 1/2 teaspoon salt

  • 1 avocado, sliced

  • 1 cucumber, julienned

  • 1 carrot, julienned

  • 1/2 red bell pepper, julienned

  • 4 sheets nori, cut into small squares

Instructions:

In a medium saucepan, combine quinoa and water


Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes, or until quinoa is tender and water is absorbed


Remove from heat and let cool


In a small bowl, mix rice vinegar, sugar, and salt until sugar and salt are dissolved


Stir into cooled quinoa


To assemble, place a small round mold such as a clean tuna can with both ends removed on a plate


Layer quinoa, avocado, cucumber, carrot, and red bell pepper inside the mold, pressing down gently after each layer


Carefully remove the mold to reveal the sushi stack


Top with a square of nori and serve


Repeat with remaining ingredients to make more stacks

  • 1 1/2 cups granulated sugar

  • 3/4 cup unsweetened cocoa powder

  • 1 1/2 tsp baking powder

  • 1 1/2 tsp baking soda

  • 1 tsp salt

  • 2 large eggs

  • 1 cup whole milk

  • 1/2 cup vegetable oil

  • 2 tsp vanilla extract

  • 1 cup hot water

  • 1 cup chocolate chips optional

  • Halloween-themed cupcake liners

  • Halloween-themed sprinkles and decorations

Instructions:

Preheat the oven to 350 degrees Fahrenheit 175 degrees Celsius and line a cupcake tray with cupcake liners with a Halloween motif


Sift flour, cocoa powder, sugar, baking soda, baking powder, and salt in a big mixing bowl


To the dry ingredients, add the eggs, milk, vegetable oil, and vanilla extract


Blend until thoroughly blended


Once the batter is smooth, stir in the hot water


For an extra chocolatey surprise, feel free to fold in chocolate chips


Spoon two thirds of the batter into each cupcake liner


To ensure uniform servings, use an ice cream scoop


When a toothpick is inserted into the center of a cupcake, it should come out clean after 18 to 20 minutes of baking in a preheated oven

Ingredients:

  • 1

  • 5 lbs boneless, skinless chicken breasts, cut into cubes

  • 1 onion, finely chopped

  • 3 cloves garlic, minced

  • 1 can 14 oz diced tomatoes

  • 1 can 14 oz coconut milk

  • 2 tbsp tomato paste

  • 2 tsp ground cumin

  • 2 tsp ground coriander

  • 1 tsp paprika

  • 1 tsp turmeric

  • 1/2 tsp cayenne pepper

  • Salt and pepper to taste

  • Fresh cilantro, for garnish

Instructions:

Along with diced tomatoes, coconut milk, tomato paste, cumin, coriander, paprika, turmeric, cayenne pepper, salt, and pepper, put the chicken in the slow cooker


Mix everything together by stirring


Cover and cook on low for 6 to 8 hours or high for 3 to 4 hours, until the chicken is fully cooked and the flavors are mixed


Add fresh cilantro on top and serve over rice or gluten-free naan bread

Ingredients:

  • 8 slices of bread

  • 1/2 cup sundried tomato pesto

  • 8 slices peppered bacon, cooked

  • 2 cups fresh spinach leaves

  • 2 cups shredded mozzarella cheese

  • Butter for grilling

Instructions:

Spread sundried tomato pesto evenly on 4 slices of bread


Layer cooked peppered bacon on top of pesto-covered bread slices


Add a handful of fresh spinach leaves on top of the bacon slices


Sprinkle shredded mozzarella cheese over the spinach


Place the remaining 4 slices of bread on top to form sandwiches


Butter both sides of each sandwich


Heat a skillet or griddle over medium heat


Place sandwiches on the skillet or griddle and cook until bread is golden brown and cheese is melted, about 3-4 minutes per side


Remove sandwiches from heat and let cool slightly before serving

Candied Bacon is a sweet and savory treat that combines the smoky goodness of bacon with a caramelized sugar coating. It's a perfect appetizer or snack for any occasion.

Ingredients:

  • 1 pound thick-cut bacon

  • 1/2 cup brown sugar

  • 1/4 teaspoon cayenne pepper

  • 1/4 teaspoon black pepper

  • 1/4 teaspoon smoked paprika

Instructions:

Preheat your oven to 350F 175C

Sprinkle the brown sugar mixture evenly over the bacon slices


Bake in the preheated oven for about 20-25 minutes or until the bacon is crispy and the sugar has caramelized


Remove from the oven and let it cool for a few minutes before transferring the candied bacon to a plate or parchment paper to cool completely


Once cool, break the candied bacon into bite-sized pieces and enjoy!

  • 6 cups Rice Krispies cereal

  • 4 cups mini marshmallows

  • 3 tablespoons unsalted butter

Instructions:

Grease a 9x13 inch baking dish with butter or cooking spray


In a large saucepan, melt the 3 tablespoons of butter over low heat


Add 4 cups of mini marshmallows to the melted butter, and stir continuously until the marshmallows are completely melted and the mixture is smooth and well combined


Remove the saucepan from the heat

Ingredients:

  • 1 can 15 oz chickpeas, drained and rinsed

  • 2 tablespoons olive oil

  • 1 small onion, finely chopped

  • 2 cloves garlic, minced

  • 1 teaspoon ground cumin

  • 1/2 teaspoon ground coriander

  • 1/2 teaspoon paprika

  • Salt and pepper to taste

  • 1 cup Greek yogurt

  • 2 tablespoons fresh lemon juice

  • 2 tablespoons fresh parsley, chopped

  • 1 tablespoon tahini

  • Optional toppings: cherry tomatoes, cucumber slices, olives

Instructions:

Warm up a big pan with olive oil over medium-low heat


Add the chopped onion and garlic and cook for about three minutes, until the onion turns clear


Add the paprika, salt, pepper, ground cumin, and ground coriander and mix well


Add one to two more minutes of cooking until the food smells good


When you add the chickpeas to the pan, saut them for 5 to 7 minutes, or until they begin to turn golden brown


Put Greek yogurt, fresh lemon juice, and tahini in a different bowl and mix them together until the mixture is smooth


Put the chickpea saut in bowls, top with the Greek yogurt sauce, and sprinkle with fresh parsley that has been chopped


Cherry tomatoes, cucumber slices, and olives can be added as a garnish if you want to add more flavor and texture

Ingredients:

  • 8 oz pappardelle pasta

  • 1 lb Italian sausage, casings removed

  • 1 small onion, finely chopped

  • 2 cloves garlic, minced

  • 1 can 14

  • 5 oz diced tomatoes

  • 1/2 cup chicken broth

  • 1/4 cup heavy cream

  • 1/4 teaspoon red pepper flakes

  • Salt and pepper to taste

  • Grated Parmesan cheese for serving

  • Fresh basil leaves for garnish

Instructions:

Cook the pappardelle pasta according to package instructions until al dente


Drain and set aside
